Here's my answer:
It's because employers have tunnel vision when it comes to hiring. Employees have tunnel vision too when it comes to creating your own career, or in the process of acquiring new skills. And Universities have tunnel vision too when creating a data science curriculum. To add fuel to the fire, true out-of-the-box thinkers with broad competences are more interested in creating their business and competing against hiring employers, than in applying for jobs.
